For 4 people
*Ingredients*
1 Tofu block (350g)
4 ladle Soup (kelp & bonito)
1 handful Dried bonito flake (put it in a tea bag or wrap with kitchen paper like a filter)
+Soy sauce
+Sweet rice wine (Mirin) or Sugar
+Salt
+Starch
*Recipe*
1. Wrap tofu in kitchen paper and microwave (500W) for 5 minutes.
2. Heat plenty oil in a deep pan.
3. Boil the soup, add soy sauce, sweet wine, and salt to taste. Add packed dried bonito flake and let it cook, then remove the bonito.
4. Cut tofu into bite-size pieces. Flour them right before fry.
5. Fry tofu in 160C oil until its yellow and slightly swollen, (don't fry it till it golden).
6. Melt starch with same amount of soup or water, add it to boiling soup and mix well.

Tofu: hard cotton tofu
Sauce: 10 Soup, 1 Soy sauce, 1 Sweet rice wine (0.3-0.5 Sugar)
