Namban-zu

Japanese sweet and peppery vegetable sauce for deep fried small fish, deep fried chicken, pork and beef.

*Ingredients*
5 Soup (kelp & bonito)
1 Vinegar
1 Soy sauce
1 Sweet rice wine (Mirin)

+Dried bonito flake
+Green long onion
+Red chilli


*Recipe*
1. Grill onion to bring out the flavour.
2. Mix soup, soy sauce and mirin in a pan, heat the mixture.
3. Add dried bonito flake when it comes to boil. Turn off the heat and "passe", add vinegar, chilli and onion.


*Memo*
Proportion: ml

Instead of green long onion, you can use onion (thin slice)
Add freshly fried stuff to hot mixture and cool it. (See Namban-zuke)
